Growing up we didn’t cook tons of breakfast foods on “regular” days – mostly just a bowl of cereal in the morning – but we usually had a hot breakfast foods for holidays together. Breakfast (or brunch for those of us that sleep in), on Christmas morning was certainly a highlight – just behind the presents under the tree! Pancakes – in some form or fashion – are always a fan favorite, but would sometimes mix it up with french toast or waffles. Always a mound of bacon though! and sometime for good measure we would cut up the bacon and mix it into the waffle batter (your’e welcome!).
But these eggnog pancakes are delicious, bursting with rich flavors of the holidays – eggnog, cinnamon, nutmeg! As good as they are on Christmas morning, I suggest making them at least once or twice before – you know, for practice 😉
A little pro-tip on making pancakes fluffier, add a little extra baking powder!
